Mexican Street Corn

Happy First Official #TacoTuesday of the New Year! In celebration, we decided to try a new recipe for Mexican Street Corn. We hope you like it and Happy New Year 2022! One of our favorite things to eat in 2021 was Mexican Street Corn, so why not try and make it myself and share the recipe with all of YOU! With the first Taco Tuesday being today, I had to try it out and perfect it for you.

First, head to your local store for all the ingredients below. We understand corn isn't in season at the moment so if you have to use canned corn, that's ok. For this recipe, we used two cans of corn. If you happen to find corn on the cob, then use the same sauce and spread it atop the ear of corn after grilling.

INGREDIENTS: 2-3 Tablespoons Mayonnaise 2-3 Tablespoons Sour Cream 1/4 cup Fresh Cilantro 1 Small Fresh Jalapeño (use as you please for a kick) 1 Teaspoon Lime Juice (Fresh Limes) Tajin Seasoning (Chile & Lime Seasoning) 1/4 cup Cotija Cheese

Salt and Pepper, to taste

Vegetable Oil (for cooking use purposes only with corn) Corn (we used 2 cans)

We made this for a side dish and especially good during the summer months when corn on the cob is in season. Mexican Street Corn is the perfect accompaniment to any Mexican dish, any time of year, and especially on our first Taco Tuesday! Am I right? After gathering all ingredients, make sure to grill your corn on medium-high heat for several minutes. It will not only give it the grilled taste were looking for, but it softens the corn perfectly for the recipe. Use just a bit of vegetable oil in the pan to grill with the corn turning every few minutes until slightly charred on all sides.

In a medium bowl on the side, combine mayonnaise, sour cream, lime juice, chili and lime powder, fresh Jalapeño diced perfectly, and lime juice from fresh limes. Once the corn is ready, add your grilled hot corn. Then garnish your amazing side dish with cotija cheese and chopped cilantro. Now, it's ready to serve and impress.
